Hey friends! Happy October! Fall is definitely in the air and this lady is so very happy. Fall is my favorite time of the year. I love all the activities that come with fall. Some of our favorites are things like apple picking, the pumpkin patch, hayrides, all the fall crafts, football, and so many more. Stay tuned this fall to hear all about our activities.
Today with fall in the air I thought I would share one of my favorite breakfast recipes that is sure to warm you up on those cold fall mornings. So lets talk pancakes! I mean is there anything better then some fluffy pancakes and coffee to start your morning? I absolutely love them, but to be honest I hated how unhealthy they are. Especially now that I have a little one at home who will be enjoying all the delicious foods that mom and dad enjoy, I wanted it to be healthier. So I came up with a flour-free banana-oat, pancake. To be clear I didn’t just come up with this out of nowhere. There are many different recipes that are similar to this. I just adopted from several and created my own. Here’s the recipe:
Step 1: Blend 1 ripe banana, I cup oats, 1/2 cup (plus more for your perfect consistency) of your favorite plant based milk, 1 teaspoon of baking powder, a hint of vanilla, and any spices you would like. I love to add cinnamon and nutmeg in the fall. Sometimes I will also throw in some hemp or flax seeds if I have them to boost up the nutritional value.
Step 2: Once blended to your perfect batter consistency just fold in some chopped fruit of your choice. Apples work great as well as peaches, berries, etc.
Step 3: Poor into a pan and cook on the stove until cooked inside and slightly brown on the outside. I like mine to be a little mushy on the inside.
Tip: I use a non stick pan so that I don’t have to use any oil for cooking. This makes this recipe oil-free as well.
It seriously is that easy and that healthy! I usually will top with more fruit and some pure maple syrup. As you will see in step one you can totally adapt this to your liking and play around with what you put in it. That’s the beauty of this recipe and it’s absolutely delicious! I have also made these the night before and put them in a container in the fridge for an easy and quick breakfast in the morning.
